Notch8 Restaurant & Bar is at the Fairmont Hotel Vancouver. The interior has a luxurious and contemporary design inspired by the romance of travel in the 1930’s. Named after a train’s top speed, achieved only by the most skilled conductors, the restaurant pays homage to the hotel’s storied history and legacy as a luxury hotel along the Canadian Pacific railway.

Behind the bar, vibrant cocktails made popular during pre and post prohibition times are being shaken up.

Stumped on what cocktail to have? Design your own with a throw of the dice.

Three coloured dice mean:

  • red for whisky
  • white for syrup
  • blue for bitters

There is the possibility of 216 distinct drinks with unique flavour profiles depending on what you roll.

For my drink I rolled a 4 Red, 5 white and 6 blue, which corresponds to:

  • Dewar’s
  • Cinnamon Green Tea
  • Cascade Celery

It was a surprising combination, but it worked. I tried the other combinations that Dee and Amy rolled and they are all great cocktails. All 3 ingredients worked well with each other.
