Ganache Pâtisserie: 2021 Holiday Bûches de Noël

With the holiday season just a few weeks away, Ganache Pâtisserie is pleased to announce its Bûches de Noël menu for this year.  This year’s Bûches de Noël menu introduces a new modern yulelog creation to go with our 2 updated classics.

With a focus on tasty textures, Bûche aux Caramel Pécan Chocolat starts with a buttery pecan and cocoa nib Sablé Breton base while a Zephyr Caramel chocolate mousseline studded with crunchy pecan praline toffee pieces pairs with a milk chocolate pumpkin ganache in the middle of this bûche and the entirety is surrounded by a rich and smooth 70% dark chocolate mousse.   Bûche aux Caramel Pécan Chocolat will be available in a 6” size that feeds 6-8 people for $49.95 and a 12” size that feeds 12-15 people for $89.95.  Please note that the 12” bûche will be available by pre-order only.

Maintaining last year’s updated look, Ganache Pâtisserie’s two classic bûche de noël are the Bûche au Chocolat  which takes a chocolate roulade sponge rolled with a dark chocolate ganache and dark chocolate mousseline filling with cocoa nibs and finishes it with chocolate buttercream and a dripping chocolate glaze.  Meanwhile Bûche au Marron Café rolls a coffee chiffon cake with a Zephyr Caramel coffee ganache, a chestnut mousseline filling, chestnut pieces and vanilla buttercream finish.  Both yulelogs are decorated with chocolate end caps,  chocolate fans, traditional meringue mushrooms, fondant snowflakes, and holiday-themed chocolate décor.  Both traditional bûches will be available in a 6” size that feeds 6-8 people for $47.95 and an 8” size that feeds 8-10 people for $59.95.
 
All three bûche de noël  are now available for pre-order and they will have the 6” and 8” sizes available in their showcase starting Friday December 17th

In addition to the bûche de noël menu, they are happy to announce the addition of 2 new dessert creations to the Fall/Winter 2021 menu that was soft launched a couple of weeks ago.  Roulade aux Mangue-Ananas ($8.75) takes the traditional Swiss roll cake to another level with its tropical symphony of flavours.  A not-too-sweet mango chiffon cake is rolled with a tart and creamy pineapple cream cheese diplomat cream and the cake slice is enrobed in a coating of Ruby chocolate and toasted coconut that is finished with a flourish of vanilla Chantilly cream.  Caramel Malt Chocolat ($8.50) layers a toothsome flourless espresso chocolate cake with a malted milk chocolate and chestnut mousse and is topped by a light salted caramel parfait and chocolate cocoa nibs. 

And with the holiday season, they welcome the return of our famous mincemeat tarts ($5.50) which are currently available on Fridays and Saturdays only, and the introduction of their new collection of Bijoux chocolate boxes.  Available in three flavours, Bijoux aux Ruby et Blanc Chocolat is a returning favourite that pairs white and Ruby chocolate with freeze dried raspberries pieces and cocoa nibs while Bijoux aux Caramel Amandes Chocolat is made with Zephyr caramel chocolate, 64% dark chocolate, toasted almonds and dried cranberries and lastly, Bijoux aux Chocolate Lactée et Fraises is a neopolitan blend of white and milk chocolate with dark chocolate and strawberry crispearl inclusions. The Bijoux chocolates are available in a box of 4 pieces for $9.95 or a box of 9 pieces for $22.50 and if you can’t decide, there is an assorted box of all 3 flavours in a 9 piece box as well.
