Brassica restaurant officially opens on the Sunshine Coast on October 5, 2022

Brassica has a launch date! The highly anticipated new community-to-table restaurant is slated to officially open on October 5, 2022. Located at 292 Gower Point Road in Lower Gibsons, guests will have the opportunity to enjoy a menu by award-winning chefs Jack Chen and Hilary Prince, wildly inspired by the rich abundance of fresh local ingredients from both land and sea.

The 2,450 square foot space features a full bar, warm interior with 40 seats in its dining room, and 40 more patio seats overlooking the marina.

“We look forward to cooking for our friends, neighbours, and community, as well as visitors to the Coast,” says Chen, executive chef of Brassica, who previously worked at prestigious restaurants around the world and in Vancouver. “Our menu is inspired by the changing seasons and all the fresh local ingredients we have access to here on the Coast and around BC. Hilary and I have had a great time working with our Coast farmers, such as Hannah and Mel at Grounded Acres, Raquel at Hough Heritage, and Farmer Dan.”

Brassica’s food is deliberately simple and unadorned, featuring thoughtfully crafted proteins, seafood, and produce, designed with sharing in mind. Dishes, which will change with the seasonality of ingredients, include Delicata Squash Tempura with fermented garlic honey, ricotta, and sesame; Applewood Smoked Sockeye Salmon with potato flatbread, radish and creme fraiche; Butter Roasted Ling Cod with parsnips, chorizo, honey mussels, and caramelized buttermilk sauce; and Pork Collar with cabbage, Granny Smith apples and peppercorn jus.

Prince’s dessert menu, highlighting unique takes on classic sweet treats, include a Dark Chocolate Verrine with toasted coconut, almonds, and bananas and a Seedy Zucchini Cake with berries, tonka bean and cream cheese frosting.

On the libations side, guests can expect a variety of wines, beers, and cocktails, including a selection of taps at the bar. Local Sunshine Coast brands include 101 Brewhouse and Distillery, Sunday Cider, Banditry, and Gibsons Tapworks.

The wine list, featuring new and old world wines, both local and international, is curated by sommelier Jenna Briscoe, while the cocktail list was developed by Stephen Whiteside of East Vancouver’s Dachi.

“We’re excited to finally open our doors to the Gibsons community,” adds Andrew Barnes, CEO of Coho Collective. “In the past year, we’ve met so many amazing and talented people on the coast, and can’t wait to welcome everyone inside Brassica, as well as all the small businesses joining us inside our Sunshine Coast commissary.”

At launch, Brassica will be open Tuesday to Saturday for lunch, happy hour, and dinner service, from 12 p.m. to 8:30 p.m.
