Glowbal Restaurant Group Chefs Celebrate Halibut Season By Hosting Special Dinners At COAST and Five Sails

A pair of acclaimed chefs from Glowbal Restaurant Group will cast their nets, captivate seafood lovers and mark the beginning of halibut season by hosting multi-course dinners paired with wines from some of BC’s best vineyards at Coast (1054 Alberni St.) and Five Sails in the Pan Pacific Hotel (999 Canada Place) this April.

Glowbal Restaurant Group Chef Dennis Peckham (Lumiere Restaurant, Notch8 Restaurant & Bar, The French Laundry) will start the seasonal celebration by hosting a five-course tasting dinner in the O-Lounge at Coast on Tuesday, April 5 at 6:30 p.m. A limited number of tickets are available for $120 per guest plus tax and gratuity, with optional pairings from Kelowna’s Mission Hill Family Estate Winery and Martin’s Lane Winery also available for an additional $60++ per guest.

The Coast Halibut Tasting Menu features the following:

  • Halibut Crudo (shiro shoyu vinaigrette, smoked ikura roe, sea asparagus), optional pairing: Mission Hill Exhilaration Brut Rosé;
  • Marinated Halibut Caviar (Thai-style broth, coconut milk, fragrant herbs), optional pairing: Martin’s Lane Riesling;
  • Halibut Cheek Tortellini (seared scallops, shellfish emulsion, uni glaze), optional pairing: Mission Hill Perpetua Chardonnay;
  • Forno-Roasted Halibut (braised beef short rib, stuffed morel mushrooms, melted leeks, red wine jus), optional pairing: Martin’s Lane Naramata Pinot Noir;
  • Classic Lemon Tart (caramelized lemon tart, dehydrated raspberry, toasted meringue, candied lemon zest), optional pairing: Martin’s Lane ice wine.

Over at Five Sails in the Pan Pacific Hotel, Michelin-starred international talent and Glowbal Culinary Director Stefan Hartmann (Bauhaus, Autostrada Osteria Vancouver House) will present a Five Sails x Quails’ Gate West Coast Halibut Dinner on Thursday, April 14 ay 6:30 p.m. A select number of tickets to the five-course feast are offered for $210 per guest plus tax and include the following dishes and wine pairings:

  • Cured halibut in Kombu (avocado, edamame, yuzu vinaigrette, caviar), paired with Laurent Perrier Cuvee Rosé NV;
  • Confit Halibut and its Brandade (whole roasted celeriac, black garlic, watercress, smoked bone broth), paired with Dry Riesling 2020;
  • Halibut Agnolotti (Daikon radish, red beet infusion, bonito flakes), paired with Stewart Family Reserve Chardonnay 2019;
  • Seared Halibut (white bean purée, slow-braised portobello mushroom, caper-parsley jus), paired with Pinot Noir 2020;
  • Tiramisu (marsala mascarpone, chocolate caviar), paired with Optima Late Harvest 2020.
