Eva Schnitzelhaus set to open in downtown Victoria this week

Prost! A new ’haus where locals and visitors alike can experience authentic après-ski vibes without ever hitting the slopes arrives in the heart of capital city’s dining scene this winter. Eva Schnitzelhaus officially opens its doors at 509 Fisgard Street on Wednesday, November 17, 2021 for dinner service.

Eva offers seating for 38 in a bright and spacious 600 square foot space that evokes the warmth and ambiance of a ski chalet thanks to exposed wood, brick elements, and walls adorned with vintage and contemporary framed posters and paintings. The new restaurant is helmed by co-owner and executive chef Maxime Durand — formerly of award-winning Victoria staple Agrius — who brings playful new interpretations of classic German, Swiss and Austrian fare to the forefront on Eva’s happy hour and dinner menu.

“We wanted to take German, Swiss and Austrian ingredients and recipes as people know them and give them a fresh new interpretation, while still honouring the traditional ways they are prepared, presented and representative of a celebrated culinary heritage,” says Durand. “We want to keep the Eva dining experience light, casual, and great for conversations – creating a relaxing place where guests can come after work, for dinner, or to grab a late-night snack over a stein or two. We look forward to welcoming guests into the space very soon.”

Durand and sous chef Emile Hudon-Dionne are currently finalizing the menu, but guests can expect to find a variety of share plates, mains, sides, and a full happy hour snack selection to complement after-work bevvies with housemade highlights that include Potato and Raclette, Beets and Sour Cream, Ham Hock and Sauerkraut, Pretzel and Mustard, and an Endive Waldorf Salad.

Eva’s menu also includes a full slate of schnitzels that range from Schweineschnitzel and Jagerschnitzel to a signature Schnitzel Eva, Schnitzel Sliders and a vegan- and vegetarian-friendly Eggplant Schnitzel, with as many menu ingredients as possible sourced from such local purveyors and providers as Metchosin’s Stillmeadow Farm and the Saanich Peninsula’s Square Root Farm.

The Eva front-of-house team will be anchored by co-managers and B.C. hospitality industry veterans Kaylund Mons, most recently wine director at Vancouver’s renowned Bauhaus Restaurant, and Cole Veto, former assistant general manager at Agrius and Libretto.

“Our wine list offers a great, diverse mix of the best that BC’s backyard has to offer as well as an eclectic mix of old- and new-world varietals,” says Mons. “And like any good Schnitzelhaus, our beer selection features a wide variety of German beers like the Ayinger OktoberFest Marzen, Weihenstephaner Hefe Weissbier, Bitburger Premium Pilsner and Radeberger Pilsner, among many others.”

Eva is expected to officially open on November 17, 2021, just in time for après-ski season.
