Botanist: Celebrate 2022 Father’s Day with Brunch

Whether you’re celebrating Father’s Day with brunch, treat Dad to one of Canada’s best restaurants this year. Located in Fairmont Pacific Rim and recently named one of Canada’s Best 100 Restaurants for 2022, Botanist showcases the natural wonders of the Pacific Northwest, with dishes from Executive Chef Hector Laguna and cocktails from Head Bartender Jeff Savage. 

For brunch, enjoy two or three sweet & savory courses with dishes ranging from hand-cut beef tartare with smoked egg yolk, caper berries, parmesan and sourdough to oven roasted sablefish cassoulet with white beans, arugula and bacon jus and for dessert, enjoy a  pink grapefruit pavlova with pink grapefruit curd, mint chantilly cream and raspberry sorbet complemented by cocktails including the classic caesar and new takes such as the Spindrift featuring a local IPA, aged rum, rosemary, grapefruit sherbet and lime juice.

At dinner, signature dishes include the foie gras torchon, served with caramelized apple, savory waffle, and bacon syrup and the hand-cut tagliatelle, with foraged mushroom, mushroom soil, and crispy piave cheese. The menu also offers a delectable selection of vegan dishes or opt for a Chef’s ‘We’ll Take It From Here’ menu for a palatable surprise.

For those celebrating early, make sure to try the cocktail tasting menu offered on Saturdays, encompassing a six-course cocktail driven menu curated by Jeff Savage with paired dishes from Chef Hector Laguna.
