Laphroaig, the world’s number one selling Islay single malt and at the end of 2016, they launched Laphroaig Select in Canada. Laphroaig makes excellent Scotch and we always keep a bottle of 10 Year Old in our liquor cabinet.

The liquid inside of Laphroaig Select is hand picked by Laphroaig’s Master Distiller, John Campbell, from the finest casks comprising the Laphroaig portfolio – Quarter Cask, PX Cask, Triple Wood and Ten Year Old – creating a subtle blend of peat, oak and sweetness. The bottles come in 750 mL bottle.

When you drink this, it has a deep smoky taste with a gentle sweetness. As it finishes, it is dry with smoke and spice.

Laphroaig Select is a good introduction to Laphroaig’s line of Scotch.

Chic Choc Spiced Rum is made in Canada and produced with six indigenous spices -Peppery Green Alder, Pine Forest Spikenard, Witherod Berries, Lovage Root, Sweet Gale Seeds and Wild Angelica. This creates a spicy flavour profile with hints of sugar cane and cinnamon, complemented by a subtle peppery tone. This rum is the only artisanal rum using Nordic spices grown in Quebec.

It does have a very unique flavour profile compared to other spice rums. It’s pretty good as a mixer in drinks.

Gaspésien Libré

One of the drinks I made with the Chic Choc Spiced Rum is the Gaspésien Libré, which is a rum and coke with lime. I didn’t have 1642 Cola, so I made a substitution with Coke.

  • 45ml Chic Choc spiced rum
  • 180ml 1642 Cola
  • Ice Cubes
  • 1 lime wedge

Instructions:

  1. Pour the rum into a highball glass, half-filled with ice cubes
  2. Top up with cola
  3. Add squeezed lime wedge
  4. Stir using a mixing spoon

Decoding nutrition labels can be confusing. With the start of a new year, eating healthier is on the top of everyone’s mind. But sometimes healthy food choices might not always be obvious, or easy.

At Loblaws owned stores like Real Canadian Superstore, Your Independent Grocer, and No Frills, all labels have guiding stars to help take the guesswork out of choosing foods that are nutritious for you and your family. For myself, picking fruits, vegetables, dairy and different proteins are easy to figure out what is best for you, but when it comes to packaged products, it’s very hard to tell, at least for me, it’s a mystery. Having those stars there help me choose the best product to purchase.

Healthy Chicken Enchiladas

I wanted to make some Chicken Enchiladas, so with a little help from Guiding Stars and Loblaws, they helped me supplement healthier ingredients into this meals by “trading up” the ingredients in the recipe.

Ingredients:

  • Around 1 lb chicken breast (traded up from dark meat)
  • 1 medium onion, chopped
  • 1 tablespoon olive oil (traded up from vegetable oil)
  • 6 (8 inch) whole grain tortillas, softened (traded up from white tortillas)
  • 1 1⁄2cups grated Monterey Jack cheese
  • 1⁄4cup unsalted butter (traded up from salted butter)
  • 1⁄4cup wheat flour (traded up from all-purpose flour)
  • 15 ounce, low-sodium chicken broth (traded up from regular chicken broth)
  • 1 Greek yogurt (traded up from sour cream)
  • Chopped red chillies to taste

Directions:

  1. In frypan, cook chicken and onion together in oil over medium-high heat until chicken is just done.
  2. Divide cooked chicken evenly between 6 tortillas; add 1 1/2 tablespoons cheese to each tortilla.
  3. Roll enchiladas and place seam-side down in 9×13″ baking dish that has been lightly sprayed with no-stick cooking spray or olive oil
  4. Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.
  5. Remove from heat; stir in YOGURT and chilies; pour sauce evenly over enchiladas.
  6. Top with remaining 3/4 cup cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

It was surprisingly really good. M gobbled it up for dinner and said it’s the best thing I’ve cooked in a while. It was a hit and I’ll most likely make it again. It was easy to make.

Bowmore Distillery produces scotch whisky on the isle of Islay. They are one of the oldest in Scotland and is established in 1779. They are full of rich history and been perfecting their craft to create great whiskey.

I was invited to try their core single malt scotch whisky as well as their limited editions:

  • Small Batch
  • 12 Year
  • 15 Year
  • Vault Edit1°n

Being able to taste them all side by side to taste the differences, really opened my eyes to the subtle differences in each bottle.

Small Batch

The Small batch is matured in first and second fill ex bourbon casks.

First-fill bourbon offers delicious vanilla sweetness, subtle spices and bourbon oak smoke to complement Bowmore’s gentle peaty smokiness, while the second-fill cask enhances Bowmore’s fresh fruity complexity and showcases its trademark honey and creamy malt character. You’ll notice the Small Batch has the best qualities of both.

When I took a few sips, I could sense the wispy smoke, bourbon oak, and vanilla. Of the 3 whiskies, it is the lightest with its warm golden colour.

12 Year

The 12 Year Old is described as having puffs of peat smoke and pools of honey, sharpened by lemon zest. The colour was a bit barker than the small batch, so it was more like warm amber. You can taste the honey and smoke from the peat.

15 Year

The 15 Year Old is matured in an inspired combination of both bourbon and sherry casks, with it’s the final three years spent in Oloroso sherry casks that gives this Bowmore the rich, deep colour reflected in its name, and its warming finish. You can taste the cedar wood of the casks and the tannins from the sherry.

Vault Edit1°n – First Release Atlantic Sea Salt

The Vault edition is created using the finest hand selected ex-bourbon casks. This bottle reflects the microclimate in the depths of the No.1 Vaults. The Bowmore distillery is in close proximity to the sea and its vital in determining the character of this drink. You can sense the taste of fruits, spiced cocoa and blood orange. As it lingers in your mouth, the sea salt.

Robbie Burns

If you’re into cocktails, you can easily incorporate the Bowmore Small Batch with sweet vermouth, orange bitters, and absinthe. A very classic drink.

Winter has hit Vancouver harder than usual this year and one of our favourite things to do over the holidays is to stay in and host our friends and family. We were recently introduced to Stanley Park Brewery’s seasonal Winter Glow IPA and Windstorm West Coast Pale Ale, and both have been well stocked in our fridge as we celebrated the season and rung in the new year.

Winter Glow IPA

The Winter Glow IPA draws its inspiration from the Canadian tradition of receiving mandarin oranges on Christmas Day. It’s a medium-bodied IPA with a golden, zesty and subtly sweet mandarin orange taste and aroma.

Although a few of our friends don’t usually enjoy fruity or floral elements in their beer, we thought that the smooth, golden and zesty flavours were great reminders of Christmas and paired perfectly with holiday dinners.

Windstorm West Coast Pale Ale

On the nose, the Windstorm West Coast Pale Ale smells like it’s going to be an IPA at first. With a flavour profile of earthy pine, light citrus, and a refreshing, clean finish, it is a true embodiment of its name. We’d get this again and recommend giving it a try yourself.

For this Christmas, we wanted to try something different. We usually make a roast turkey, but we thought we would try to get a turducken.

A turducken is a turkey stuffed with a deboned duck and then a deboned chicken.

We talked to a few butchers in Metro Vancouver and Beefway Meats on Kingsway was able to put together a 16lb turducken for $8.99 per pound. We ordered ahead of time so they could prepare it for us.

We chose them as they acquire meats that are local and hormone-free.

The turducken came vacuumed sealed and wrapped in a mesh to keep it all together. Before preparing it, we made sure we took it out of the fridge to bring it up to room temperature.

When we asked them what was the best way to cook it, they told us to look it up on Google.

Preparation

We moved the turducken onto a roasting pan, smothered it in butter and herbs. You can go to your grocery store and purchase a poultry blend (Rosemary, Sage, Thyme) of fresh herbs. If they don’t have it, try to get the separately.

Finally, we cover it with bacon to add more flavour and to keep the turducken more moist. One pack of bacon should do the trick.

Cooking

Looking at so many different websites for cooking times, we just did ours at 250°F for about 5.5 hours until the internal temperature of 145°F.

After it was done, we let it rest so all the juices don’t flow out.

Final Thoughts

The thought of having a turducken seemed so glorious in my mind, but left us all a bit unsatisfied in the end. It was really hard to cut and fell apart easily. The layers were a bit dry and lacked the buttery goodness. Since each layer didn’t have extra butter or herbs, it couldn’t penetrate into the meat.

We are still glad we tried it out but I think in the future we will stick with a regular turkey.

Turkey Stuffing Chips was an interesting item to see. How would they take the essence of turkey stuffing and put it on chip?

After devouring a few chips, you can taste the sage and savoury spices that remind you of turkey stuffing.

PC Tuna Tataki Sustainably Sourced Seared Wild Albacore Tuna

This sustainably sourced wild albacore tuna is seasoned and lightly seared on the outside while retaining its firm, uncooked texture on the inside. It’s in the frozen aisle, so it just needs some defrosting.

A great item to make with this are crispy sesame rice cakes with tuna tataki.

PC Butter-Infused Seasoned Young Turkey with Two Stuffings

I get my turkeys from Presidents Choice and I’ve always had a successfully moist turkey at the end of cooking it. It is infused with PC Black Label Normandy-style Cultured Butter for deeply rich flavour throughout.

This Canada Grade A turkey is filled with two stuffings:

  • bread stuffing with apples
  • savoury stuffing with pork sausage

PC Italian Chocolate Truffle Trio

Inside this bag of Italian Truffles are three varieties.

  • a rich dark chocolate variety made with dark cocoa cream and crispy caramelized cocoa nibs
  • two milk chocolate varieties studded with crunchy crisps
  • hazelnut filling and the other with creamy vanilla filling

Really pretty to have in a bowl on your table. Plus, these taste really good.

PC Hot Cocoa & Marshmallow Fudge

These small bites of fudge taste like hot chocolate with mini marshmallows partially melted. Instead of having a whole cup of hot chocolate, you can just have a small bite.

PC Maple & Bacon Popcorn

Maple and bacon come together in this batch of popcorn. It brings a new sweet-savoury combination. This item can be a hit and a miss for some people. M really enjoyed this item, but I thought it was just ok.

Chocolate Pecan Pie Bar

Of all the items, my favourite was the Chocolate Pecan Pie Bar. The filling is made with brown sugar, semi-sweet chocolate, butter and vanilla poured in a flaky rectangular-shaped pastry. It’s hand-topped with pecan halves and baked until tender and crisp. So good!

Breakfast is an essential part of the day, but if you’re always running around like me, putting together something in the morning with more than 2 ingredients is too tough for me. I kinda need coffee or tea before I begin to function. My quick morning routine is granola and yogurt. If I have more time on the weekends, I’ll make something with more effort.

I got sent some Quaker Super Grains Granola with Blueberry and Pecans to give it a try.  It contains seven super grains and seeds – whole grain oats, whole grain wheat, flaxseed, red quinoa, sunflower seeds, amaranth, & barley.

I added the crunchy clusters to some strawberry yogurt and created layers in a cup. I enjoyed the texture of the granola and the fragrant pieces of dried blueberries. The grains and pecan added a nice nutty taste.

You can also make No-Bake Granola & Yogurt Tarts with the Quaker Super Grains Granola with Blueberry and Pecans if you want to be a little bit more fancy.

President’s Choice released their Winter PC Insiders Collection and there were lots of cool products, but one of my favourites was the Chocolate Pecan Pie Bar. I am a huge fan of pecan pies and once I have a piece I can’t stop eating it. If you’re too lazy to cook something for a holiday party, pick this up and your guests will love it. It’s cheap and it won’t break the bank ay $7.95.

The filling is made with brown sugar, semi-sweet chocolate, butter and vanilla poured in a flaky rectangular-shaped pastry. It’s hand-topped with pecan halves and baked until tender and crisp.

Simple to slice crosswise into individual bars or on alternating angles for a more classic wedge shape.

I cut it on alternating angles to have the super cute wedge. I liked the ratio of the mixture to the pecans.

Pair it with ice cream or top it off with whipped cream.

I’ve been a fan of Reese Peanut Butter Cups during my days trick or treating during Halloween when I was a kid. When people wanted to trade their peanut butter cups, I welcomed them into my stash. The combination of the peanut butter and chocolate were addictive.

They recently came out with their peanut butter cup stuffed with Reese’s Pieces which blew my mind because I didn’t think they would ever come up with this. These are available in the United States and will shortly be available in Canada. I was sent a few packs to give them a try. I didn’t hesitate to say yes because I love chocolate.

Taking the first few bites, I found that the outer coating of the Reese’s Pieces adds texture to the peanut butter cup. Other than the texture, the peanut better cup itself still has a good sweet taste for those peanut butter lovers out there.

A pretty good concept and you’ll be able to see then on store shelves in Canada soon.

I got my hands on the PAQUI Carolina Reaper Madness for the One Chip Challenge from Safeway. It was located by the customer service counter with a warning for anyone purchasing it. It retailed for about $5 for just one chip. Apparently it’s all sold out now, so there won’t be anymore on store shelves till next year.

Essentially, the chip doesn’t have any taste at all. It just burns for about 10 minutes. The hot stabbing pain is pretty intense.

We definitely wouldn’t recommend anyone else to try this.

Starbucks is selling their Gingerbread Cafe Kit in stores for the holiday and it looks so cute, so a few foodies got together to build it. It retails for $29.95 and it’s definitely not cheap at all compared to other gingerbread houses out there. If you are a Starbucks Coffee fan, it’s pretty fun to build you own cafe. Dee was able to get us a nice discount on the kit, so we just had to get together and build it.

Watch the video that Dee/Gastrofork shot as we made the Gingerbread house. It’s pretty funny, but there is some language not suitable for children or work.

Building it wasn’t too difficult, but it was hilarious seeing everyone else try to build it together while drunk.

Once we got all the walls up and the decorating began, we had trouble figuring out what to do with all the candy canes and red cups. The Starbucks logos were pretty flimsy and I thought it would have been better if it’s a harder sugar cookie.

Overall, it was really fun to build for the holidays with friends but I think we were lacking some artistic ability to make it awesome.

Sriracha Cashews

You’ll only find 4 ingredients in this snack – Cashews, sriracha flavour, garlic powder, and kosher salt. No hidden ingredients you can’t pronounce. The Sriracha is nice and light so it’s more mild than the actual sauce itself. The flavours worked really well with the cashews.

Hearty Tamari

This was my personal favourite of the snacks. Sesame sticks and spicy pretzels mix with almonds and cashews, all slow roasted in delicious Tamari. It’s kinda like soy sauce but less salty. I was so addicted to those sesame sticks. I ate all 4 portions in one sitting, but I really enjoyed it.

This snack is a little spicy, salty, and crunchy. I found the pumpkin seeds matched really well with the wasabi peas. I also loved those wild rice sticks.

Goji Granola

This was definitely more hearty than the other snacks. There’s so many ways to eat this goji granola. Straight up with milk, sprinkle it on yogurt, or dive into the bag and eat it by the handful as a snack. My favourite was eating it with yogurt so the bag lasts longer. If you gave me the whole bag, I would try to finish the whole bag in a day.

Overall, I was really impressed by the snacks that I’m almost done all of them within a week. I’m usually not a big snacker, but I wasn’t disappointed in any of their snacks. Each subscription box is about $30, but it’s not bad at all since they use quality ingredients. You can switch up your delivery frequency to 2 times a month, each month or every other month. The Kenmore Pro Blender by Sears Canada just released last week and this blender delivers all the functionality you’d expect from competitors, at a fraction of the price. It retails for $149.97, which is pretty good compared to some other models that are $550+.

Sears Canada sent me a blender to review and try out a few different recipes to really test the limits of this blender. Smoothies, soups, and sauces are some of the more usual items to make with blenders.

Spaghetti Bolognese

Instead of getting pasta sauce straight out of a jar, I thought it would be fun to make it from scratch.

Ingredients:

  • 1 medium brown onion, peeled and quartered
  • 2 cloves of garlic
  • 2 tbsp of Extra Virgin Olive Oil
  • 800g of diced tomatoes (I used a mix of tined and fresh)
  • 500g ground lean pork
  • 250ml beef stock
  • Handful of basil and Italian herbs
  • Salt & Pepper

Instructions:

  • Place onion and garlic into blender and blend on medium speed until roughly chopped.
  • Add to sauce and olive oil in pan on medium heat until softened.
  • Place tomato and herbs in blender on medium and blend until smooth.
  • Add mixture into sauce pan with ground pork.
  • Let simmer for 30 minutes until sauce thickens.
  • Season with salt and pepper.

Putting together the bolognese sauce wasn’t too difficult at all. The hardest part was waiting for it to simmer down to a thicker consistency. After 30 minutes, the sauce started firming up and it looked more like pasta sauce.

Then, I quickly cook the pasta and begin plating the dish. I also made some croutons in the oven just for some extra texture.

Potato and Leek Soup

I wanted to try a soup recipe as well since it can chop, blend, purée, and even heat up soups in a flash.

Ingredients:

  • 2 tbsp Extra Virgin Olive Oil
  • 1 stalk of Celery, roughly chopped
  • 600g potato, peeled and roughly chopped
  • 800 ml veggie stalk
  • 4 tbsp cream
  • Salt & Pepper

Instructions:

  • Add celery and leek into blender and chop at medium speed.
  • In a pan, add olive oil and soften leek and celery mixture.
  • In the blender add stock, potato, and the celery and leek mixture.
  • Increase speed gradually to maximum for approx. 5 minutes until steaming.
  • Add cream, salt and pepper to taste.
  • Transfer to a pot on stove top to continue heating.

The blender actually did a really good job at blending all the ingredients together.

I gradually turned it up to the maximum and I was surprised that the soup got hotter and hotter.

You can tell by the steam collecting at the top that the blades are spinning so fast that its heating up the soup.

As a foodie, an important aspect of the kitchen are having amazing knives that can cut through anything and of course have an amazing aesthetic look. The knives are curvy, smooth feeling and has a good balance to them when holding. Easy to cut through meat, veggies and fruit. The Santoku is the ideal multi-function knife out of all the knives in the set. A great everyday knife.

They advise you to hand wash only, do not soak, and dry with clean towel before storage. Never put them in a dishwasher as the heat could warp and dull the blades.

We had them in our Thanksgiving meal this year too as my parents have the same set of knives. I was just a bit behind to purchase them myself. it cut through all the roast with ease and looked great.

For the price, it’s definitely worth it if you can catch it at 75% off. I’ve seen knives sell for the price of this entire block set. I’m in love with these set of knives, but you have to make sure you take care of them so it prolongs their life. If they end up warping within a year, Canadian Tire offers a free 1 year exchange warranty redeemable at any of their stores.

Sudio Sweden produces earphones with a nice aesthetic look. With the new iPhone 7, they removed the earphone jack, so bluetooth earphones was on my list.

Dealing with cords is a pain and if you need to carry an adapter around for wired headphones, it’s just more items you need to carry on the go. Sudio’s wireless bluetooth line of earphones – Sudio Vasa Blå was sent to me and I gave it a try for a month to see how it compared to my other headphones and wireless earphones.

The Look

The wireless earphones come in 4 colours – black/rose gold, pink/gold, blue/gold and white/rose gold. All of them come with the rose gold or gold accents on the ear bud. I went with the black since we have the matte black iPhone 7. Black earphones seemed to make sense.

The Performance

I listen to a wide range of music from EDM to soft piano/violin instrumentals, so I put these earphones to the test.

I didn’t have any issues with battery life, it did last quite a long time without needing to be recharged. You get up to 8 hours of playtime. If they are inactive, the batteries last up to 10 days.

The sound quality is decent, but it is missing more of the bass that I look for when listening to music. I enjoy earphone and headphones that have more range and make you feel immersed in the song. I felt like these missed the mark.

The Price

The Sudio Vasa Blå retails online for $140 and it’s on par with a few other wireless earphones. When it comes to electronics, I do tend to invest more into it so it lasts longer. You’ll have to evaluate if you want these to be your primary earphones or if this is more on the go.

Overall, the Sudio Vasa Blå are decent earphones, but it wouldn’t be my personal favourite for wireless earphones. It was missing the heavy bass levels that make you feel immersed in the songs. If i’m travelling and needed something convenient to carry around, I would consider this.
