Yes, Chefs! Glowbal Restaurant Group Adds All-Star Talent To Vancouver Culinary Team and New Black+Blue Location In Toronto

Glowbal Restaurant Group is marking its 20th anniversary by adding a group of five accomplished chefs to the roster that will reinforce Glowbal’s already sterling culinary reputation at both its Vancouver restaurants and a new Black+Blue location set to open in the heart of Toronto’s Financial District this fall.

Headlining the list of Glowbal’s new kitchen acquisitions is Michelin-starred international talent Stefan Hartmann, who steps into the role of Culinary Director for new and upcoming Glowbal restaurants and will also oversee operations at the group’s Five Sails Restaurant in the Pan Pacific Hotel. Hartmann most recently led the opening team at Autostrada Osteria Vancouver House and served as Regional Executive Chef at Tacofino for more than three years.

Hailing from Uelzen, Germany, Hartmann honed his skills in some of Europe’s most celebrated restaurants before opening the eponymous Hartmann’s in Berlin, where he earned a prestigious Michelin Star in 2010. His extensive and well-travelled resume also includes turns as a restaurant consultant and owner for establishments in Los Angeles, Mexico and Berlin before coming to Vancouver and serving as Executive Chef at the former Bauhaus Restaurant in 2015.

Also re-joining the Glowbal chefs team is Dennis Peckham, who will work on the development of culinary operations at Black+Blue in Toronto later this year. Peckham’s resume includes stops at Vancouver’s Lumiere Restaurant and Notch8 Restaurant & Bar in the Fairmont Hotel Vancouver as well as at California’s Michelin-starred staple The French Laundry. Culinary TV fans may also recognize Peckham’s name from his win on The Food Network Canada’s Chopped Canada in 2016 and as a competitor on Top Chef Canada in ’19.

Rounding out the new team of five is Fernando Burgues, who worked alongside Michelin-starred chefs in the UK (Roux at the Landau, The Wolseley) and Spain (El Serbal, Casona del Judio) and has been promoted from Executive Sous Chef at Glowbal Restaurant to Executive Chef at CoastRobert Robinson (Vancouver’s Le Crocodile, West, Bacchus Restaurant, Toronto’s Canoe Restaurant) who now assumes the role of Head Chef at Five Sails Restaurant in the Pan Pacific Hotel; and Ron Stratton (Toronto’s Habits Gastropub, &Company Resto Bar, Figures Restaurant, and the famous Centro that brought David Lee, Marc Thuet, and Michael Bonacini to Canada), who has taken the reins this year at Black+Blue Vancouver as its Executive Chef.

Glowbal began bolstering its back-of-house team last year when it welcomed acclaimed chef Alex Kim to its team as Executive Chef at its flagship Glowbal Restaurant after his three-year turn as chef de cuisine at the former MARKET by Jean-Georges at the Shangri-La Hotel Vancouver. After emigrating to Canada as a teenager, Kim worked the line at a number of Alberta’s top luxury hotel properties including Fairmont Chateau Lake Louise and Fairmont Hotel MacDonald before coming to Vancouver to continue his culinary career in 2017.
