The Modern Pantry in West Vancouver Launches Evening Service and Wine Bar

 The Modern Pantry in West Vancouver is celebrating summer with a necessary addition for the warmer months – a sunny patio tucked into the rear of the cafe boasting mesmerizing ocean views. The patio pairs perfectly with the cafe’s new wine bar and evening service, featuring light bites and grab-and-go picnic offerings. 

Situated in cozy Ambleside with a second location in North Vancouver, The Modern Pantry was founded by Kendall Parslow, whose love of food led her to Havana, Cuba, to study regenerative agriculture, and Pollenza, Italy, to complete a Master’s degree in Food Culture and Communications. After working for one of the world’s largest food markets in London, England, and eating her way through five countries, Kendall returned to her hometown of West Vancouver to open The Modern Pantry, a community bakery and cafe that has cultivated a tight-knit community while supporting local growers and producers.

New this summer, The Modern Pantry’s West Vancouver location has introduced evening service, Thursday to Saturday, from 4pm to 8pm. Here, guests can choose from a growing selection of organic, natural, and biodynamic wines, paired with light bites like charcuterie and cheese, roasted tomato gruyere tart, and focaccia with an assortment of dips, including roasted beet hummus, caramelized onion feta, and arugula pesto. Visiting at lunchtime? Wines are served throughout the day along with light cocktails such as aperol spritz and a mimosa set for two featuring rosé prosecco served with orange juice made with rescued fruits. 

The Modern Pantry’s new offerings can be savoured on one of the cafe’s two patios – promising a spot in the sun from morning to evening. Guests are invited to linger and soak in the ambience of surrounding Ambleside and ocean views. Patrons popping in for bites en route to the nearby beach or on a road trip to Whistler can take advantage of grab-and-go picnic offerings, made for two people to share, including a selection of meats and cheeses as well as house made condiments and crackers ($22, plus tax). For a larger crowd, guests can add freshly baked bread and an assortment of fresh goods from the deli fridge.

“I’m thrilled to debut our new wine bar in tandem with our amazing patio – the perfect pairing for summer,” said Kendall Parslow, owner of The Modern Pantry. “I hope our guests come to regard our cafe and patio as a second home this summer and beyond – a place where they can sample freshly baked fare while tasting the difference in quality born from biodynamic and regenerative viticulture. With our extended hours, people can explore interesting, out-of-the-box wines with a story in an inspiring setting year-round.”
