I really love chicken especially when you find the perfect combination of ingredients to make your marinade. For this particular day, I wanted chicken and vegetables, so I thought roasting some vegetables and marinating chicken thighs would make for a simple meal.

The hard part is to figure out what should I add into it. I have a pretty limited amount of spices lying around the kitchen, so I added them all in.

Marinade Chicken

  • 8 chicken thighs, deboned
  • 1 cup Soy Sauce
  • 1/4 cup Honey
  • 1/2 cup Mirin
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoonGarlic Powder
  • 1/2 teaspoon Cayanne Pepper
  • 1/4 tablespoon Salt
  • 1/4 tablespoon Pepper

Roasted Vegetables

  • 2 tomatoes
  • 1 bunch of Asparagus
  • olive oil
  • salt
  • pepper

Debone your chicken thighs with a pair of kitchen scissors and cut the bone away. Some people don’t like deboning but I just imagine it as biology class where you need to retrieve some item out of the carcass. Clearly I was an ace in High School biology.

In a bowl, mix together the soy sauce, mirin, honey, cayanne pepper, onion powder, garlic powder, salt and pepper.

Mix it all together until its well combined. Then, if you have time, leave it covered in the fridge for about an hour to marinate.

Prepare the vegetables to be roasted. Wash it and remove the woody ends by bending it until it snaps. Drizzle olive oil over then and season with salt and pepper.

Preheat the oven to 350F and it will need about 15 minutes to be roasted.

Take the chicken into a pan and heat it up to medium heat.

I left it covered so it could retain more of the heat.

You will need 5 – 7 minutes on the first side, then 3 to 5 minutes on the second side, or until browned and cooked through.

Chicken and vegetables all ready for dinner. The chicken would go really well with rice or quinoa, but I really felt like roasted vegetables today.

Ajuker Fried Chicken (AFC) is located on North Road in Coquitlam and serves up delicious Korean fried chicken. Their name was taken from a Korean chain restaurant. BusanGirl always frequents this restaurant with a bunch of her friends, so I made her take me to try their fried chicken.

Lots of Koreans and university students like to frequent this place at night for drinks, fried chicken, and hanging out with friends. The interior isn’t too big, but if you have a large group, they can accommodate them.

Hite Beer is a Korean beer that has a light flavour profile. It’s great with fried chicken.

Makgeolli is a Korean rice wine. It has about 7% alcohol and is made of fermented wheat and rice.

BusanGirl has a trick of adding a can of Sprite into the Makgeolli to make it taste better.

It a very popular drink in Korean culture, but I didn’t particularly love it. I’m not used to it. Everyone else at the table did enjoy it.

Complementary peanuts came to the table. It’s great to accompany the wine and beer as we wait for the food to arrive.

Complementary spicy tofu soup came to the table. We had no idea how to split this between the 4 of us, so we just stuck our spoon into it and drank it slowly. It didn’t look spicy at all, but it had a kick of spicy red peppers.

Complementary pickled radishes goes very well with the fried chicken.

Small Original Fried Chicken was really crispy on the outside and moist inside. I really like it a lot.

Sauced Fried chicken wasn’t spicy, but it was kinda like honey garlic with a kick. It’s the same as the original fried chicken and then they throw the sauce on it.

Korean Pancake was HUGE! It was so big that the plate couldn’t even contain it. The taste was OK, but not great. They definitely needed a bit more filling. The sauce that comes in it is a mixture of soy sauce, vinegar, sesame oil, and sesame seeds.

Korean Fried Rice with Slices of Rice Cake was good!

Complementary Spicy Rice Cake (tteobokki) came at the end of the meal, we were quite surprised that so many complementary dishes arrived. It’s a normal occurrence at Korean restaurants since it’s part of their culture to have “service” come with the meal.

Overall, we did like this restaurant. Great to hang out with friend with some late night food and drinks. You get a lot of complementary dishes that come with your meal.

Two Two Fried Chicken is a chain restaurant in Seoul. Their first location was in Myeong-dong in 1978 under the name Gela Chicken, but changed their name in 1990. They now have several locations around Seoul and is still expanding into other countries.

After you put down your order with your server, you get complementary side dishes depending on what you order.

Popcorn (Left) accompanies beer that you order. It’s not like the traditional popcorn in North America, but it’s so good!

Pickled Radishes (Right) accompanies the fried chicken that you order. I love this stuff! So good and addictive!

Cass Beer is a Korean manufactured beer. It’s light and very good to eat with chicken.

I ordered the fried chicken with a bit of spice. It was good, but the chicken was a tad dry. The spices rubbed on the chicken was very good and the amount of spiciness tasted great. I didn’t like the cabbage with the ketchup and mayo on the side.

Overall, the chicken was good, but could be more juicy. When you visit Korea, you must have fried chicken and beer!

  • Smoking is allowed (they give you an ashtray at your table)
  • You pay the cashier at the front of the restaurant
