ARC Restaurant at Fairmont Waterfront has expanded its patio dining space, now with covered seating for taking in the harbour breeze on warm summer days. The ARC Restaurant Patio is available daily for breakfast, lunch and dinner, as well as every Friday through Sunday for Bottomless Weekend Brunch, and every Monday through Friday for ARC Happy Hour.
To help take in the beautiful Vancouver summer season, ARC Restaurant’s bar team has also created a number of specialty summer cocktails and beverage offerings, perfect for ARC Patio sipping. Diners can enjoy a variety of Garden to Glass Cocktails that highlight ingredients sourced from Fairmont Waterfront’s rooftop garden and apiary. In addition, the Flaming Rosemary Gimlet uses herbs and honey from the rooftop garden, as well as a special West Coast Wild Gin, developed exclusively for Fairmont Waterfront by Wayward Distillery. This unique spirit was created in celebration of the Pacific Northwest Coast fauna, crafted from fermented honey sourced from Fairmont Waterfront’s rooftop apiary, and uses traditionally harvested local botanicals including Juniper, Nootka Rose, Bull Kelp, Spruce Tips, Cedar and Lavender.
The ARC Restaurant Beverage Team has also launched their Let’s Get Fizzical Mimosa Tasting Flight, which features 3 specialty mimosas. Priced at $19.00 CAD, this mimosa flight includes a Peach, Star Anise and Cinnamon mimosa, a Grapefruit and Elderflower mimosa and a Pineapple and Hibiscus mimosa. Each unique mimosa offering in the tasting flight was developed to be a perfectly refreshing summer patio libation.
