Botanist is set to host Canada’s 100 Best Dinner Series on July 10, 2025

For one night only, Botanist at Fairmont Pacific Rim is pleased to host the Vancouver edition of Canada’s 100 Best Restaurants’ annual dinner series. The celebratory evening on Thursday, July 10, 2025, will showcase the imagination and finesse of some of Canada’s premier chefs, great seasonal Canadian ingredients sourced from coast to coast, and exceptional vintages from the private cellar of BC’s Phantom Creek Estates

Led by Executive Chef Hector Lagunaand Chef de CuisineJayden Kresnyak, Botanist, a Canada’s 100 Best top-50 mainstay, will welcome a stellar lineup of culinary guests to collaborate on this exclusive multi-course experience: chef Mike Robbins of Michelin-starred AnnaLena (ranked No. 10 on the 2025 C100B list); and chef Massimo Piedimonte of Montreal’s acclaimed Cabaret l’Enfer. Each chef will contribute a course to the five-course dinner, ending with a seasonal dessert by Fairmont Pacific Rim award-winning executive pastry chef Kate Siegel. 

“We’re honoured to host Jacob Richler and Canada’s 100 Best Restaurants’ annual dinner series at Botanist this year for what will be an incredible evening,” says Laguna. “Our team is always inspired by collaboration, and we look forward to cooking alongside Mike and Massimo in our kitchen.” 

The evening will start with a special reception at 6:00 p.m., featuring hors d’oeuvres and canapés by the talented chefs, champagne from Moet & Chandon, and cocktails from Botanist Bar and guest bartender Shawn Soole from Laowai. Dinner begins at 7:00 p.m.
