The talented bar team behind AZUR Legacy Hotel’s Lavantine Restaurant & Skybar is adding a new chapter to its ever-growing compendium of cocktail tales and unveiling a new volume of ocean-inspired drinks at the chic downtown rooftop bar and oasis at 833 West Pender Street.

Following the lead of the first two chapters in a drink list that was inspired by Arabian folklore and legends like the 1,001 Nights and Aladdin and the Magic Lamp, Lavantine’s latest collection of signature libations — entitled ‘Chapter III’ — swaps sand for surf, plunging beneath the waves to explore the mysteries of the deep in a trio of colourfully creative drinks that includes:

THE SEAHORSE SPRITZ
Aperol, Ketel One, Passion Fruit Liqueur, Passion Fruit Purée, Prosecco

Capturing the playful elegance of one of the ocean’s most enigmatic creatures, this unique libation is inspired by the vibrant colors and graceful dance of the seahorse. It blends the crispness of vodka with the bittersweet charm of Aperol and mingles the tropical allure of passion fruit with an effervescent kick of prosecco.

NEPTUNE’S GARDEN
Roku gin, Midori, Basil, Lime, Soda

Inspired by the rich, verdant landscapes that lie beneath the ocean waves, this refresher features gin infused with fresh basil, sweet notes of melon liqueur, and a zesty hint of lime. Topped with a splash of soda, each sip is like a gentle breeze through an underwater forest, bringing to life the tranquil beauty of the sea’s secret gardens.

TRITON’S TREASURE
Bumbu Rum, Mount Gay Rum, Diplomatico Blanco, House Juice Blend, House Bitters, Cointreau, Orgeat, Citrus

Gather your crew and dive into Triton’s Treasure — a cocktail made for many to enjoy that’s served in a grand shell, evoking the opulence of the sea’s hidden riches. This lavish concoction features a blend of white, dark and spiced rums, a vibrant medley of tropical juices (pineapple, orange, passion fruit), Cointreau, orgeat, banana and bergamot bitters for complexity, and a touch of lime for a refreshing zing.

The new chapter in the cocktail list also features a selection of 2oz Shots that allow guests to sip and savour signature Lavantine cocktails in a more concentrated form that perfectly captures the essence Chapter I and II creations such as The Desert Dreams (Pinot Grigio, Roku gin, Cocchi Extra Dry, Banana, Pineapple, Mango, Pomegranate, Plum, Papaya, Citrus, Aloe Vera), the ‘Spain’ (Campari, Passion fruit, Galliano, Aquafaba, Vanilla) or ‘Greece’ (Grey Goose, Pistachio, Honey Walnuts, Coffee) as well as classic contemporary cocktails like Espresso or Pornstar Martinis or the famous Tommy’s-style Margarita.

“Chapter Three is about embarking on an aquatic adventure via drinks that capture the vibrant colours of coral reefs, shimmering sunlit currents and sunken vessels and immerses our guests in the magic of the deep,” says Sofia Sayani, AZUR’s Managing Director of Food & Beverage. “While our list of shots showcases mini masterpieces that are designed to provide a burst of flavour, create a memorable experience in just a sip and elevate every evening and experience.”

Open Tuesdays through Saturdays from 4 to 11 p.m., Lavantine offers guests a resplendent oasis and respite from the hustle and bustle of the city high atop the 14th floor — a garden-like setting while the sun shines and a magical enclave by moonlight that showcases unique design features like a retractable awning, fountain that hearkens back to Arabesque courtyards, lush greenery, open-concept kitchen and more.
