Fairmont Waterfront Introduces Signature Gin

In celebration of the upcoming International Gin and Tonic Day, Fairmont Waterfront is thrilled to announce its signature spirit, Waterfront Gin. Created in partnership with Wayward Distillery, this unique gin marks the perfect blend of luxury, sustainability, and the spirit of the West Coast.

Distilled using honey from both Fairmont Waterfront’s rooftop apiary and offsite hives, Waterfront Gin also incorporates carefully chosen botanicals that evoke a true sense of place—where seaside, forest, and garden meet. Locally foraged spruce tips, Nootka rosehips, cucumber, and rosemary are combined with honeybee favourites such as clover and lavender to create a gin that is as distinctive as the West Coast itself.

A Taste of the West Coast
Guests can now savour Waterfront Gin through ARC Restaurant + Bar’s renowned Garden to Glass cocktails, which highlight fresh ingredients grown on-site in the hotel’s rooftop garden, and extensive cocktail list. Signature drinks like the Apiary cocktail, which blends Waterfront Gin with chartreuse, house-made honey syrup, champagne acid, and rosemary, encapsulate Fairmont Waterfront’s dedication to dynamic, seasonal creations.

Additionally, guests will want to try the hotel’s signature Waterfront Gin + Tonic, featuring 2 oz of Waterfront Gin paired with Fever Tree tonic, garnished with juniper berries, lime dust, an orange twist, and a bay leaf—elevating the classic cocktail with a fresh, West Coast twist.

Partnership with Wayward Distillery
Wayward Distillery, known for their expertise in honey-based spirits, has been producing craft spirits since 2014. This pioneering distillery shares Fairmont Waterfront’s commitment to sustainability and environmental stewardship. Each bottle of Waterfront Gin is made with fermented honey from the hotel’s rooftop bees, combined with botanicals that honour the West Coast’s indigenous flora, such as juniper, nootka rose, bull kelp, spruce tips, cedar, and lavender.
