Mumbai Meets West Coast Wild: Wildlight Kitchen + Bar Hosts Collaboration Dinner With The Indian Pantry

What happens when the bold, bright flavours of Mumbai meet up with the modern west coast fare of Wildlight Kitchen + Bar? The answer is an exciting ticketed multi-course dinner event taking place on Sunday, September 10 at the beautiful West Point Grey restaurant. 

Chefs (and good friends) Warren Chow of Wildlight Kitchen + Bar and Tushar Tondvalkar from The Indian Pantry are teaming up for this special five-course collaboration dinner. Bridging their distinct culinary styles and influences, the event will blend the authentic flavours of Chef Tondvalkar’s hometown, Mumbai, and its neighboring regions, infused with a touch of Chef Chow’s “West Coast Wild” fare, which showcases ingredients from the Pacific Northwest prepared with a global sensibility. 

The duo’s combined culinary talents will bring to the table thrilling collaborative dishes such as a Geoduck Ceviche, using the Pacific Northwest’s iconic clam prepared with a take on a traditional solkadhi beverage, made with coconut and kokum, a plant from the mangosteen family. To enhance the dining experience, Wildlight’s Bar Manager Aman Nijjar will be crafting unique cocktail pairings for the night that will showcase Indian flavours and B.C. ingredients. 

Tondvalkar is the owner and Executive Chef of The Indian Pantry. He has worked at Bangkok’s two-Michelin starred Gaggan and one-Michelin starred Gaa, and at Vancouver’s acclaimed Blue Water Cafe, Bauhaus, The Fish House in Stanley Park, and West Oak, before becoming the Executive Chef of Mumbai Local. In 2019, Tondvalkar founded The Indian Pantry, which doles out top-quality regional Indian food through tasting menus, private dinners, catering services, and retail options. He also co-owns local “ghost kitchen” restaurants Urban Tadka and Frankie Street Wraps.

Wildlight Kitchen + Bar and The Indian Pantry’s collaboration dinner will be offered in two seatings on Sept. 10, at 5 p.m. and 8:30 p.m.
