Say goodbye to 2020 and hello to 2021 with a special five-course meal at Five Sails. This menu is available for one night only and is $150 per person.

1st Course

Oysters 
Local Oysters, cucumber and mint jelly, Oyster Foam, Carrot, orange and Cardamon purée 

Smoked Salmon
Cold Smoked, Sesame Crust, Fennel and Leek mousseline, Bergamot Foam

Black Truffle Terrine
Root vegetable terrine, Burgundy Black Truffles 

2nd Course

Ravioli
House Made Wild Mushrooms Ravioli, Cream of Caviar 

3rd Course

Foie Gras 
Pan Seared Foie Gras, Jerusalem Artichoke Mousseline.
 Foie Gras Terrine, Poached Pear, Toasted Brioche

Scallops
Great Bear Scallops, Brown Butter, Tomato and Paprika Compote, White Asparagus

Truffle and Shallot Tart
black shallots, Burgundy Black Truffles, Rutabaga Compote, Arugula

4th Course

Lobster
lobster ballotine, traditional French rouille, pommes dauphines, spinach mousseline.

Roasted Veal
Veal tenderloin, spéculos cream sauce, Dubonnet poached pear, sautéed wild mushrooms, marcona almonds.

Dover Sole Risotto
Dover sole, Champagne risotto, broccoli sprouts, burgundy black truffles.

5th Course
