Fresh Prep: Valentine’s Dinner at Home

Fresh Prep Vancouver has you covered for Valentines Day this Sunday for a romantic night in. Instead of going to a busy restaurant with all the other love birds, a night in is a great alternative. Perhaps there will be Netflix involved. It’s great for those who don’t like the hassle of looking for a recipe or grocery shopping as its delivered to your door.

They are offering Lemon Rosemary Salmon with Arugula & Ancient Grain Risotto for two, with 2 Lemon Squares, a candle and Sandhill Estate Chardonnay 2014 (optional).

The price of the dinner for 1 without wine is $44 and with the wine, its $60.

You can order this up until 2pm on Valentines Day.

What ingredients are in the box:

  • Wild sockeye salmon filet
  • Lemon, sliced (organic)
  • Rosemary sprigs (organic)
  • Ground rosemary
  • Himalayan Salt
  • Ancient grains (organic)
  • Vegetable bullion (organic)
  • Arugula, chopped (organic)
  • Carrot, shredded (organic)
  • Parmesan cheese, grated
  • Onion, diced

All the ingredients are portioned so you don’t have to do any chopping or measuring. Just open the packets and dump them into a pan.

The only 2 ingredients you need in your kitchen are:

  • Olive Oil
  • Pepper

A few other items you need are:

  • Baking dish
  • Parchment paper or foil
  • Small pot

Once you have those 5 things in addition to the box, you are set. The instructions are pretty easy to follow and it doesn’t take that long to cook.

The risotto was pretty easy as you throw everything into the pot at the appropriate times.

For cooking novices like M and I, it was a good way to try something new without trashing our kitchen. The salmon fillets looked really good and straight into the oven it went into once we put the lemon, olive oil and rosemary on top.

Once all the different items are ready, you can begin the fun of plating it. Instead of putting the risotto in a pile, I found a mould ring in my drawer and used it to shape up the risotto.

If you don’t have a ring mould, it’s pretty awesome!

Overall, easy meal to make, but I think I overcooked the salmon slightly. I usually like my salmon slightly undercooked. The lemon squares were a nice touch to the meal, but I think I would have preferred something with chocolate. If you haven’t had a lemon square, they are good if you love lemons. I had a different wine with my meal, so I’m not sure how the Sandhill Estate Chardonnary tastes like.

I love the convenience of Fresh Prep and its cheaper than buying all the ingredients separately. There is not waste as everything is measured out.
